January cooking class posts

Well the classes are back! Our snout to tail class will not be for those who have weak stomachs. Upon entering the dining room you will be greeted with half a pig, head and all! This class is for those who are interested in how we break down a pig, and were all the different cuts come from. We will definitely be making bacon, pancetta, and cured jowl. We will be working on recipes using the sirloin, shoulder, head, loin etc. So bring your appetite! Stay tuned for more posts early January!
